2016 Sauvignon Blanc
THE JUDGEMENT OF THE CELLAR MASTER
We ensure only the best juice goes into our version of this noble white wine. Intense aromas of tropical fruit and gooseberries on the nose followed through to a vibrant, sea-shell minerality on the pal-ate. Perfect for drinking now and up to four years from vintage.
Site: Cape South Coast, Walker Bay / Bot River region, Western Cape, South Africa
Age of the vines: 9 years
Vines: Planted on drought resistant Ramsey root-stock with stronger growth characteristics for the higher lying sandy sections of the farm and wetness tolerant 8-7 rootstock for the lower laying laterite, clay areas.
The four vineyard blocks were carefully monitored and harvested separately. The Sauvignon Blanc 2016 grapes were handpicked dur-ing the harvesting time frame of the 1st and 22nd of February, cap-turing different flavour profiles and ripeness levels.

THE WINE CELLAR
The fruit was carefully de-stemmed and gently pressed. Strictly re-ductive winemaking practices took place to preserve the flavour characteristics. After the settling of two days at
10 °C and the racking from the lees, the natural fermentation was induced. The fermentation temperature was kept at 12 to 14 °C. Af-ter the alcoholic fermentation the wine was left on the fine lees for 6 months before it was bottled on the 24th of October 2016.
Goat’s cheese either baked, in a salad or on its own; fish, whether it is baked, steamed, fried or served as a soup. Also, lime, coriander and garlic when cooked with fish, chicken or vegetables.
